We asked Mike Stewart to tell us about the Bark River Bird and Trout knife. This is what he said.
“We have made a couple of variations in the past.The blade is relatively straight and thin - .0065 - .007 blade thickness We made these out of CPM s35vn, a super steel so they will really hold an edge and still be tough enough and flexible enough for you to actually put some pressure on them. The whole idea of a bird and trout knife is really for gutting fish and gutting birds and taking them home. It is not necessarily one that you would debone with in the field. This one you can debone with. The blade is thin and sharp and tough enough to do all of your Bird and Trout jobs.
Made in about 85 different handles.”
