The kitchen knives everyone should own
Chef's knife: Thhe most important knife in your kitchen. Choose a European chef's knife (if you prefer the Japanese style, a Santoku) of eight or ten inches. It'll be your go-to blade for almost all food-prep tasks -- slicing and dicing fruits, vegetables, meat and fish.
Paring knife: The blade you'll go for when you want to slice or mince food too small for your chef's knife. A typical paring knife is between three and four inches.
Boning knife: More precise than a chef's knife, longer and sturdier than a paring knife. Use a boning knife for cutting and boning meat, fish and poultry. The blade flexes a little, a quality useful in many tasks.
Bread knife: If you buy un-sliced bread (or even bagels) from your local bakery. The best bread knives we know of, by far, come from Shun. Use it on more than bread -- steak, tomatoes, and other food that yields better to a serrated edge.
